The Night Chef at The Silo Hotel ensures that the night shift in our busy hotel is effectively managed from 23:00 – 08:00. They ensure that all guest and hotel requirements are met and kept at the highest standards of The Royal Portfolio, that all Kitchen personnel are working as a team in order to achieve the purpose of the company, which is "to give our guests a complete experience and a perfect stay".
MAIN DUTIES & RESPONSIBILITIES
- To assist the Executive Chef and Senior Sous Chefs in the overall maintaining and managing of the Kitchen Department, by ensuring that all the duties of the night shift are completed
- To assist in upholding all Kitchen systems, standards and service to the highest level
- To monitor all Kitchen personnel in the absence of the Executive Chef and Sous Chefs
- Be the Senior Chef on duty during night shift
- To ensure that all Kitchen staff are given in depth handover at the start of their shift regarding groups, VIP’s, special events, meal themes, dietary requirements and any other pertinent information
- To monitor health and safety, know our fire policy and how to evacuate staff if need be
- To communicate and work closely with the Front Office Department for night audits
- To ensure that all guests receive prompt, genuine, warm and efficient attention and service throughout their stay
- To ensure that all guest needs and any complaints are responded to quickly, efficiently and courteously
- Ensure that the highest cleanliness and hygiene standards are adhered to
- Ensure that all the necessary mise en place is completed before the end of the shift
- To ensure that all repair and maintenance issues that need attention are reported to the relevant parties and to ensure the appropriate action is taken
- Make sure new staff understand their jobs and assist them in all their training needs
- To assist in maintaining appropriate stock levels as required according to the budgets
- Must understand and live our Purpose and Value Statement of The Royal Portfolio
REQUIREMENTS, QUALIFICATIONS & EXPECTATIONS
- Tertiary Culinary Diploma (or higher) from a recognized tertiary institution
- At least 5 years’ experience with 2 years in a Night Chef role
- Fair and firm management abilities with high influencing skills
- Strong knowledge of food and beverage
- Creative and innovative
- Hands-on approach to all operational aspects
- Strong administration skills
- Passionate, well presented, professional, confident and energetic
- Must have excellent communication skills (excellent command of English, reading and writing)
- Punctual, reliable, pro-active
- Be a team player, have respect for all fellow colleagues
- To be of sober habits and mature enough to self-manage
It is important that the candidate is able to work as part of a team and is a good cultural fit for The Royal Portfolio.
South African citizenship is advantageous. A valid work permit is essential if you are not in possession of a South African ID document.
Please note it is a condition of employment, that all staff undergo a pre-employment polygraph test.
